Strips of Steak with Spinach Salad and Bluemin White Recipe

Ingredients

  • 100g Bluemin White (diced)
  • 80g pearl barley, soaked overnight
  • 2 medium sized sirloin steaks
  • 1 large red pepper
  • 1 large yellow pepper
  • 2 large portobello mushrooms
  • 1 large red onion
  • 1 clove of garlic (chopped)
  • 1 tbsp white wine
  • 200g fresh raw leaf spinach

Instructions

  • Drain the soaked barley and place in a pan of boiling water, boil over medium heat for 30 minutes or until tender.
  • Slice mushrooms, peppers and red onion into thick chunks, place in the over for 20 minutes at approximately 200°C
  • Season the steaks with black pepper and griddle for 7 minutes, or wrap in foil and bake for 15 minutes
  • Add chopped garlic and white wine to a glass bowl with the Bluemin
  • White cheese. Place over a simmering bain-marie for 5 - 10 minutes until the cheese melts and stir together with the wine to create a molten texture
  • Add fresh spinach to two plates, top with the roasted vegetables, sliced steak and drizzle with Bluemin White sauce
  • Enjoy the rest of the wine with the meal. Cheers!
