Ingredients
- 200g Mrs Bell's Salad Cheese
- 2 pomegranates
- 1 cucumber, diced small
- 1⁄2 red onion thinly sliced
- 40g mint leaves, roughly chopped
- 40g coriander leaves, roughly chopped
- 120g bag of mixed rocket, spinach and watercress
- Balsamic vinegar and seasoning
Instructions
- Break open pomegranates and remove seeds
- Crumble Yorkshire Fettle into large pieces
- Combine the pomegranate seeds, Mrs Bell's Salad Cheese, cucumber, onion and herbs into a large bowl.
- When ready to serve, place the mixed salad leaves into a serving bowl and add vinegar, oil and salt and toss to combine
