Deliciously quick and full of flavour.  This simple dip can be tweaked to your taste and prepared ahead of time.

Ingredients

  • 200g Yorkshire Fettle
  • 2 pomegranates
  • 1 cucumber, diced small
  • ½ red onion thinly sliced
  • 40g mint leaves, roughly chopped
  • 40g coriander leaves, roughly chopped
  • 120g bag of mixed rocket, spinach and watercress
  • Balsamic vinegar and seasoning

Instructions

  • 1. Add all the ingredients into a food processor
  • 2. Whizz to a smooth consistency.
  • 3. Chill and serve with well toasted sourdough, rye bread "soldiers" or celery.
