Comforting and nutritious - January recipe inspiration

With the excesses of the festive season behind us, January is a month for hibernation and comfort, and the perfect opportunity to rest, recuperate and nourish our bodies for the year ahead.

With the excesses of the festive season behind us, January is a month for hibernation and comfort, and the perfect opportunity to rest, reset and nourish our bodies for the year ahead.

It may still be cold and dark outside, but this month is a great time to try something new in the kitchen. Whilst you may have overindulged a little over Christmas, the left-over cheese in your fridge can be put to delicious use in creating something nutritious as well as warm and comforting as we await the warmer days of spring.

Soup is always a lovely warming option.

Filled with nutritious vegetables, it can also be as indulgent (or not) as needed.
Our Mrs Bells Blue & Sweet Potato Soup is a great way to use left over vegetables languishing in your post-Christmas cupboards, all paired with our creamy Mrs Bell’s Blue cheese for an added decedent touch.
Perfect for a weekend lunch, it’s also a great option for batch cooking for a quick weekday meal to stave off the gloomy winter weather.

Nothing says comforting indulgence quite like a delicious risotto.

The methodical, slow stirring needed to create this beautiful dish is therapeutic and lends itself to slow January weekends.  Try our Mushroom and Harrogate Blue recipe, filled with fresh shallots, chestnut and button mushrooms alongside our buttery, full bodied Harrogate Blue cheese for an indulgent dish with a twist.

Super Substantial Salads

Whilst you may feel it’s time to reach for the salad, that doesn’t mean endless plates of limp lettuce leaves.

A warming and equally nutritious alternative could be our Mrs Bell's Salad Cheese with Couscous, Broad Beans, Peas, Mint.
Perfect eaten either warm or cold, as a side dish or as a main on its own, the broad beans and peas add the green element you may be looking for whilst the couscous and Salad Cheese add delicious substance and flavour.
